Walnut fool

I tried this a few times with different mixtures and different textures (and various degrees of failure!) until I got it right.  You can either eat this as soon as you make it, or put it in the fridge for later, it will dry out a little bit in the fridge, but it is set enough to eat immediately if you like.  It isn’t overly sweet – it uses maple syrup as a sweetener, which isn’t as sweet as some syrupy things, but the smoky flavour goes well with the walnuts.

The recipe makes about 3 – 4 serves depending on how greedy you are.

125g cream cheese

1 cup thickened cream

4 tbs maple syrup

1 cup walnuts, keep a few for decoration, chop the rest finely

Whip cream until very thick – until it is past the “stiff peaks” stage, but not quite at the butter stage.  At the same time, blend the cream cheese and maple syrup until smooth.  Fold through the cream, then fold through the nuts.  Decorate with spare walnuts. Spoon into serving glasses.  It is that simple.
