This is so quick, it probably takes almost as much time to chop up the chicken as it does to cook! It is a quick variation on the classic honey & soy chicken dish.
1 tsp butter;
3 tbs lemon juice;
3 tsp honey;
2 tbs gluten free soy sauce;
I clove garlic, chopped very finely;
1 cm piece of ginger, peeled and chopped very finely;
500g skinless chicken breast, cut into bit sized strips.
Put all ingredients except for chicken into a microwave safe container with a lid, cover and cook for one minute. Then add the chicken and cook for five minutes. Stir around in the sauce, taking care to turn over, cook for another five minutes. Stir and baste again, then cook a minute.
Tastes good served with green tea steeped microwave rice.
