Pesto Pocket Chicken Breast

This isn’t strictly a Christmas dish, but it is easy to prepare, which will leave you time to do other things.  And the green of the basil of course lends it to Christmas themed tables.

This is quite easy to make, and of course for an extra person, you only need to add another chicken breast.  This serves four.

4 boneless chicken breasts (I prefer skinless, but you can leave the skin on if you like)

A handful of basil leaves

4 tbs basil pesto

 

Preheat oven to 160 celcius fan forced, 180 if not fan forced.

Cut a slit into the fat part of the breast, slanting downwards so that you have created a pocket without cutting through the breast.  Place a large basil leaf in the cavity, then a tablespoon of pesto on that.  Place in a greased baking dish, and repeat with all breasts.  Cook for approximately 30 minutes, or until cooked (cooking time will vary depending on how big the breasts are).

 

Strew a few basil leaves over the chicken and serve.
