100g rice vermicilli noodles

1 tbsp vegetable oil

1 tsp lemongrass paste

2 spring onions, finely sliced

2 garlic cloves, very finely chopped or grated

1/2 tsp chilli flakes

500g minced beef

3 tbsp gluten free soy sauce

Juice of half a lime

2 tsp caster sugar

1 carrot, cut into thin batons

1 stalk celery, sliced finely

1 tbsp fresh mint leaves, sliced finely

1/2 cut salted roasted peanuts

 

Place noodles in a bowl of boiling water for a minute then drain.  Heat oil in a large, heavy based pan, then fry onion, garlic, celery, carrot, chilli flakes and lemongrass paste.  Add mince, stirring to break up lumps, and fry about five minutes.  Mix soy sauce, lime and sugar in a small jug until sugar is dissolved.  Stir into meat mixture with noodles and mint, dress with peanuts and serve.
