This is really, really simple. I can’t buy commercial frozen wedges as they are coated with flour to make the flavourings stick, so cut my own. I find the addition of the hint of curry flavour just gives them a bit of bite. This serves four as a side.
1 kg potatoes, cut into wedge shapes
1/2 cup olive oil
1 tbsp mild curry powder
Salt, to season
Light sour cream and sweet chilli sauce, to serve
Preheat a fan forced oven to 200 celcius, 220 if not fan forced. Combine all ingredients in a bowl and stir so the wedges are well coated. Tumble into a low sided baking tray and put in the oven for approximately 30 – 40 minutes (depending on how thickly you have cut your wedges). Drain on kitchen paper briefly to remove excess oil.
