I have long been intrigued by the Eton Mess – I know some people make it with bought meringues, but it seems a good way to “use up” bits and pieces to me, or even to use a pavolova that broke up. I actually made the pavlovas for this, but you could have bought them if you wanted. This serves four.
1/2 quantity of pavlova mixture from Donova – instead of putting the pav mix in a ring tin, form four flattish discs on a greased baking sheet and bake for about 35 minutes
300ml cream, whipped with a few drops of vanilla (don’t add sugar as there is plenty in the pav)
1/2 punnet strawberries
200ml commercially prepared double thick custard
Once the pav discs are cooled, (it doesn’t matter if you have trouble getting them off the baking sheet as they get broken up anyway) – break them up and put them in a bowl. add the other ingredients, mix together and spoon into serving dishes.
